Canning?

My mom never canned. I'd actually never seen anybody can anything until I went to the Valley this time.

Oh the deliciousness! The pickled serrano peppers and the salsas! All of the glorious salsas! Delicious salsa lined up in Bell jars. Roasted peppers, salsa verde, habenero salsa... MMMM!

At my local grocery store, I can buy any kind of pepper, tomatillos, and so on for practically nothing. I'm thinking about buying a canning set-up to can some salsa myself!

Geez, canning, lottery tickets, and home cooking. I feel like a Florida retiree already!

My parents canned all sorts of fruits and vegetables when I was growing up. It's so very easy and super cheap, especially when you get such a good value on the produce. I hope you try it and enjoy yourself.

I grew up canning absolutely everything that grew (and we grew A LOT). I advise picking up a copy of the Ball Blue Book. It's pretty much the bible of cannning. Check Craigslist for jars and supplies, but purchase your own pressure canner. You don't want to get one with a defective seal. Also, be very mindful of what can be canned using a hot water bath versus a pressure cooker. They generally cannot be substituted. Finally, if you don't want to purchase all of the canning supplies, many things can be frozen into plastic bags and preserved.

I have been canning from our 'large' garden for years. In the part of the south I am from 'chow-chow' is popular (a relish of sorts). So far this year, I've made peach amaretto jam, peach butter and peach jams from peaches on our trees. Tonight, I'll be putting up 'canned peaches'. We've already put up 42 quarts of green beans, 42 dozen ears of corn as well. I LOVE walking out and picking my bell peppers when I walk by them at the grocery store at a price of 2 for $4!!
I too recommend the Ball Blue Book. In addition, I recommend Canning for Dummies (it may be canning and freezing) in the title. It has both in the book. It has very good instructions concerning when to use a pressure canner and when to use a hot water bath. It's been at least a decade since I've purchased green beans, corns, salsa, spaghetti sauce in the store. If you decided next year to plant some tomatoes to make salsa, I recommend you visit www.burpee.com and look at the 'salsa tomato'. It has more meat and is excellent for salsa. I have been ordering them for several years. They've always arrived in excellent condition too.
